Michele Ardoni’s strategic advisory track record spans over three decades and multiple industries.

His work includes pioneering Italy’s first public franchising model with Le Case dell’Acqua — deployed across hundreds of municipalities in Italy, France, Serbia and Spain — and delivering landmark projects for Coca-Cola Italia, Unilever Algida, and Disney.

As advisor to I Love Poké, he supported supply chain development, the M&A strategy behind the Giappoke acquisition, and the identification of the master franchisee for the brand’s first international entry into Portugal.

SCIALLAMI

PHYGITAL PLATFORM
Sciallami is a phygital platform — described by Mark-Up as "the smart evolution of ghost kitchens" — founded by Michele Ardoni as CEO of Dynamic Food Brands in June 2020. Unlike traditional ghost kitchen operators, Sciallami enabled restaurant chains to expand their delivery and take-away presence at zero cost, while retaining direct access to consumer data — the critical intelligence that major delivery platforms deliberately withheld from operators. It allowed consumers to order from multiple brands simultaneously, delivered in a single delivery.Presented at MAPIC Italy 2021 and selected for SMAU Berlin 2022, the platform attracted brands including I Love Poké, Mama Burger, and La Filetteria Italiana. It received coverage in Corriere della Sera, Milano Finanza, Mark-Up, and Startup Italia, establishing Michele Ardoni as a reference figure in Italy for ghost kitchen and virtual franchising innovation. The company was successfully exited in 2023.

QSR
As an advisor for I Love Poké, Michele supported supply chain optimization, facilitated growth through strategic acquisitions, and developed partnerships for virtual franchising with Sciallami®, driving expansion and streamlining operations to scale the brand effectively across new markets. His advisory role also extended to international market development, leading to the identification and onboarding of a master franchisee for the Portuguese market — marking I Love Poké's first structured entry into international franchising.

THATS'S VAPORE

HEALTY FOOD
As Strategic Advisor and Investor during a critical business phase, Michele Ardoni led a comprehensive turnaround strategy for That's Vapore. His intervention covered brand repositioning — redefining the concept's identity and market positioning to restore commercial relevance — competitive analysis to identify white spaces and differentiation opportunities in the fast-casual segment, and the development of a modernized food offering aligned with evolving consumer trends. Alongside the front-end work, Michele drove a significant simplification of production processes, reducing operational complexity and improving unit economics. The combined effect of these interventions stabilized the business and created the conditions for a successful exit: the brand was subsequently acquired by another operator, validating the repositioning strategy.

PANB - PANBOLLA

QSR
As Strategic Advisor and Consultant, Michele Ardoni led the complete repositioning and format redesign of PanBolla, transitioning the concept from a take-away model to a fully developed fast-casual experience. His work went well beyond a cosmetic refresh: he redesigned the entire operational flow of the venue, developing an innovative layout that brings full visibility to the production and operational areas, transforming the kitchen and preparation processes into a transparent, engaging element of the customer experience. The new format was applied to a flagship opening at Orio Center, the major retail and commercial hub adjacent to Bergamo Airport — a high-traffic, high-visibility location that demanded both operational efficiency and strong brand presence. Michele worked extensively on the luminosity and spatial design of the venue, creating an environment that is simultaneously welcoming and operationally streamlined. The layout simplification reduced complexity in daily operations while significantly improving throughput and customer flow. The result speaks for itself: the Orio Center location has become one of the best-performing points of sale in the entire PanBolla network.

ALGIDA STORE

QSR
Starting from the international parent company's original gelaterie format, Michele Ardoni led a complete adaptation for the Italian market — covering premium materials research, full operational redesign, and a pioneering digitalization of the point of sale. In 2011, years ahead of industry standards, he designed and implemented dynamic digital menu boards with remote control and geolocalised menu management across multiple installations. The centrepiece of the project was an iconic giant ice cream cup structure — a bold architectural landmark built from innovative materials and installed at Mirabilandia — serving simultaneously as a fully operational gelateria and an unmissable visual beacon. Alongside several other high-traffic installations across Italy, the format established a modular and scalable approach to out-of-home ice cream retail that remains one of Michele's most recognizable projects.

CASE DELL'ACQUA

PUBLIC FRANCHISING INNOVATION
Le Case dell'Acqua was born from a precise entrepreneurial insight: creating a structured, binding commercial relationship between municipal water utilities and local governments — replicating the mechanics of private-sector franchising within a public utility context. Michele Ardoni invented a model that had no precedent in the Italian public sector, designed to generate durable commercial ties between municipalities and their water suppliers through a shared infrastructure innovation. The product at the centre of the model was a modular, recyclable structure distributing chilled still and sparkling purified water directly to citizens — accessible to all, including lower-income households, while generating measurable environmental impact through the reduction of road freight traffic caused by industrial bottled water distribution. First adopted by SMAT Torino, the model expanded rapidly across hundreds of Italian municipalities and subsequently into France, Spain, and Serbia. The innovation received national recognition with a prime-time feature on TG1, Italy's leading national news broadcast. The company was successfully exited in 2011 — validating the scalability and commercial solidity of a model built entirely from scratch.

i MONTSAMONTA

GHOST KITCHEN PIONEER
After the Coca-Cola project, Michele Ardoni founded Area Consumer to scale his modular construction concept into a commercial platform. The proprietary Montasmonta system — galvanized steel and PVC, seismically certified, 100% recyclable, no foundations required — enabled rapid deployment of permanent-grade structures for foodservice, retail, beaches, parks, and events, fully demountable and reusable indefinitely. The platform produced Area Spanino, developed in partnership with Montana S.p.a. (Gruppo Cremonini): Italy's first modular food kiosk franchise, providing operators a turnkey system of structure, equipment, and ready-to-regenerate food products — a direct forerunner of the ghost kitchen models Michele would pioneer in Italy a decade later. The company was successfully exited in 2011.

COCA COLA

NEW OOH FORMAT
Starting from a Coca-Cola Italia brief requiring resilient, brand-consistent structures for sports arenas, Michele Ardoni designed a fully custom modular kiosk system that went well beyond the original scope. The structure was engineered to be anti-intrusion, fully demountable, and 360° customizable — combining stadium-grade robustness with a premium brand aesthetic. Alongside the physical structure, Michele conceived an integrated centralized food preparation system — a model that became the direct precursor of the ghost kitchen concepts he would later pioneer in Italy and internationally from 2009 onwards. The result exceeded expectations: Coca-Cola Italia increased order volumes beyond initial projections, with multiple units successfully installed at San Siro Stadium.

ITALBABY INDIA PVT LTD

FRANCHISING
In 1999, Michele Ardoni co-founded Italbaby India in New Delhi — recognized by industry experts as the first franchising company ever established in India. The original mission was to distribute premium Italian early-childhood products in a fast-growing emerging market, but local import regulations proved immediately restrictive: rather than retreat, Michele pivoted the business model entirely, transforming the company into a local production entity capable of navigating India's complex regulatory framework. To penetrate the nascent Indian retail landscape, Michele applied a modern franchising model — developing a shop-in-shop network within mid-to-high-end local retailers, replicating the mechanics of European franchise distribution in a market where the concept was virtually unknown. The venture attracted significant media attention, with features in the Hindustan Times and The Times of India in 2000. The company was successfully exited in 2001.
