Operating strictly in an advisory and consultative capacity, Michele Ardoni engaged as an external strategic advisor for a comprehensive format redesign initiative centered on the strategic location within Orio Center, Bergamo. His recommendations focused on transforming the existing format into a scalable, highly efficient operational model.
Spatial & Operational Redesign The advisory framework encompassed strategic counsel for the complete spatial rethinking of the unit. He advised on repositioning the format toward a visible open-kitchen production model. This conceptual shift placed the human element of food preparation at the center of the customer experience, transforming the operational back-of-house into a front-of-brand showcase.
Workflow Architecture & Labor Optimization He provided strategic guidance on the re-engineering of operational workflows to support the open-kitchen concept while maximizing efficiency. By optimizing the spatial flow and production lines, he enabled the unit to systematically reduce the number of operators required on shift, successfully lowering overall labor costs. He additionally advised on the integration of innovative audiovisual communication systems tailored for a scalable technological rollout.
Strategic Outcome Taking over a unit previously occupied by a different tenant, the redesigned location redefined how Italian fast-casual formats could blend human-centric preparation with operational efficiency. The project provided the scalable prototype that informed the brand’s broader format evolution.
