The fact that Clover Food Lab needed a lifeline to survive tells you everything about where plant-based fast casual sits in the current market cycle — consumer enthusiasm has not translated into sustainable unit economics, and that gap is brutal for concept-driven brands without the volume to absorb it. What operators and investors should take from this is that ideologically differentiated concepts require a fundamentally different capitalization strategy from day one, not a rescue deal when cash runs dry.
