GRUPPO ETHOS

Advisor & Growth Hacking
Duration: 2020 – 2024 (Mandate Completed)
Gruppo Ethos is a prominent Italian restaurant group. During the acute phase of the 2020 hospitality crisis, Michele Ardoni identified and developed a strategic framework converting operational paralysis into a highly profitable industrial opportunity. Operating as a Strategic Advisor, he repurposed dormant restaurant infrastructure into outsourced food manufacturing capabilities—a shift from hospitality service to B2B industrial production.
Strategic Architecture He conceptualized and structured a comprehensive transition from traditional restaurant operations to centralized food manufacturing. Rather than maintaining idle kitchen capacity across multiple locations, he established a hub-and-spoke production model engineered specifically for Quick Service Restaurant supply requirements. This involved the architectural redesign of culinary workflows to deliver cooked and standardized food products at an industrial scale.
Operational Evolution Critical to the implementation was the progression from utilizing existing restaurant kitchens to establishing dedicated production laboratories. He oversaw the creation of specialized production lines for meat processing (chicken and beef), sauces, marinades, artisanal desserts, and the production of a private-label beer for a renowned Italian chain restaurant brand.
Scope & Deliverables His advisory mandate encompassed market positioning within the contract food manufacturing sector, supply chain restructuring for B2B distribution, and commercial framework development. He created a dual-capability model where the operator could serve both end-consumers and institutional foodservice clients, subsequently integrating advanced R&D and food innovation services.
Result & Impact By the end of his mandate in 2024, Michele Ardoni had successfully managed approximately €1 million in B2B revenue. The operational volume exceeded initial capacities, driving the strategic acquisition of a purpose-built industrial laboratory. This crisis-response transformation successfully converted hospitality liabilities into scalable manufacturing assets, pioneering the outsourced production model for QSR chains in Italy.
