During the 2021 edition of Hospitality Day, I had the privilege of co-presenting with Michael Nazir Lewis, founder of I Love Poke, in the Orologio Room. Our session, titled “Ghost Kitchen and Food Delivery for Hospitality: I Love Poke – From 7 to 70 Locations in 1 Year, Despite the Pandemic, Becoming a European Leader,” delved into the transformative impact of ghost kitchens and virtual franchising on the foodservice industry.

In our presentation, we explored how the innovative model of virtual kitchens enabled I Love Poke to expand rapidly, increasing from 7 to 70 locations within a year, even amidst the challenges posed by the COVID-19 pandemic. We discussed the operational efficiencies, cost-effectiveness, and scalability offered by this model, highlighting its potential to revolutionize the traditional restaurant business.

Our session was well-received by attendees, providing valuable insights into the future of foodservice operations and the role of technology in driving growth and innovation in the hospitality industry.
