PAN BOLLA: format redesign and construction

PanBolla is an innovative Italian fast-food brand that specializes in gourmet sandwiches crafted from semi-wholemeal flours, without the use of improvers or leavening accelerators. The unique aspect of PanBolla’s offering is their revolutionary bread, which is baked under a glass dome, allowing customers to witness the baking process firsthand. This method results in a sandwich with a thin, crispy crust and a soft, melt-in-the-mouth interior. The brand emphasizes high-quality, artisanal products, combining traditional baking techniques with modern culinary innovation.    Panb_Orio_render Panb_23-10-2019_001 PanB – Pan Bolla panb PanBolla In my role as an advisor and consultant for PanBolla, I was responsible for overseeing and adapting the company’s new format across various outlets. This involved redefining operational workflows, optimizing the layout and organization of equipment and counters, and transforming the outlets from a takeaway model to a fast-casual dining experience. The goal was to offer customers a more comprehensive experience, including table service and the opportunity to observe the preparation of raw materials and semi-finished products in an open-kitchen setting. This strategic shift aimed to enhance customer engagement and showcase PanBolla’s commitment to transparency and quality in food preparation. The project aimed to reduce pollution caused by bottled water transportation and improve access to potable water, particularly in areas facing water quality issues. These structures were proposed to municipal companies such as SMAT Torino, which successfully adopted the initiative. A groundbreaking innovation of the project was its construction entirely from recyclable materials, and its adaptable design allowed installation in any municipality without requiring excavation. The structure was self-sustaining and self-supporting, adapting to various terrain conditions. This provided significant cost savings, environmental benefits, and operational efficiency for municipalities. If the initial location proved unsuitable, the structure could easily be relocated, requiring only access to a potable water supply for inlet and outlet connections. The format was later implemented not only across Italy but also internationally, including in France, Serbia, and Spain, becoming a model of inspiration for other manufacturers and municipal organizations throughout Italy. This innovative solution received widespread public and institutional recognition, even being featured on major Italian television broadcasts, including the TG1 National News at 8 PM, the country’s most authoritative and widely viewed news program. This coverage highlighted the positive reception and appreciation for this invention by both the public and municipal administrations, confirming its effectiveness and social impact. In 2008, following a challenging brief commissioned by Coca-Cola Italia, I developed and conceptualized a revolutionary modular system that addressed their need for sustainable and efficient kiosks for food and beverage service. The brief had previously failed to elicit viable solutions from prominent architecture and design firms. Within just two weeks, I delivered a comprehensive concept that surpassed Coca-Cola’s expectations, transitioning the project from a single-unit plan to the creation of five innovative kiosks at the San Siro Stadium in Milan. Key Features and Innovations: 1.Sustainability and Modular Design: •The kiosks were eco-friendly, requiring no concrete foundations. This eliminated environmental impact during installation and provided significant cost savings. •Designed to be self-supporting and adaptable to various terrains, the structures could be relocated easily if the initial location proved unsuitable. 2.Advanced Engineering: •Built with recyclable materials, including galvanized steel and PVC, the kiosks were resistant to seismic events, extreme weather conditions, and vandalism. •The modular system allowed for rapid assembly, transforming the approach to temporary and semi-permanent structures. 3.Aesthetic Innovation: •The kiosks featured a fully customizable design, with graphics covering all six sides, including the roof. This approach elevated the visual identity of the structures, aligning them with Coca-Cola’s branding goals. 4.Operational Efficiency: •The design accounted for the optimization of customer flows and operational workflows, enhancing both the user experience and staff efficiency. My Role: As the project leader, I managed every aspect of the initiative: •Conceptualization and Design: Developed the MontaSmonta system from scratch, aligning it with Coca-Cola’s sustainability and operational requirements. •Project Management: Directed the prototyping, manufacturing, and deployment of the kiosks, ensuring seamless execution and adherence to tight deadlines. •Innovation and Scalability: Created a scalable system that could be adapted for various sectors and replicated for other clients. Birth of Area Consumer and the MontaSmonta System: This successful collaboration with Coca-Cola laid the foundation for Area Consumer, the company I established to further develop and commercialize the MontaSmonta system. The system quickly gained traction and positioned Area Consumer as a leader in the kiosk sector within a few years. Further Success and Applications: The MontaSmonta system became a benchmark for modular construction and was subsequently applied to high-profile projects, including: •Disney Channel: Custom modular structures for TV productions. •Gazzetta dello Sport – Giro d’Italia: Mobile and temporary structures for sporting events. •Unilever (Algida and Carte d’Or): Innovative kiosks for ice cream sales. •Public and Private Projects: Implemented across Italy and internationally in France, Spain, Serbia, Slovenia, and beyond. The success of the MontaSmonta system highlighted my ability to merge sustainability, design innovation, and operational excellence, establishing a new standard in the modular construction industry. Let me know if you’d like additional refinements! 😊 Projects Altrofood: Advisor for the OOH channel Sublime: Advisor and Board Member Poland: Food chain development advisor That’s Vapore: Advisor & strategic partner Gruppo Ethos Ristoranti: New business advisor Sciallami: Founder I love poke: Advisor Taglio Milano: Business advisor Else Corp: Advisor for Retail Development Stadion Mall Belgrade: Food Court redesign PAN BOLLA: format redesign and construction Poseidon Group: food court consultant Unilever: Format adaptation & Construction for Algida Gelaterie Algida: Design & Construction of Kiosks for entertainment parks Disney: Designer of Set Structure for Disney Channel’s ‘Quelli dell’Intervallo Water Kiosks: Invention and International Development Cremonini Group: Street Food Format with Montana Coca Cola: Design & development format for sport arena USCE MALL: Landlord Representation for Italy Oscartielle spa: Production Offshoring Development
