The brand emphasizes nutritionally balanced dishes prepared with seasonal ingredients, offering customizable options to cater to individual preferences. Their menu includes items like steamed baskets, artisanal dumplings, and salads made from pesticide-free, vertically farmed greens. The restaurants feature open kitchens, allowing guests to observe the steam-cooking process, and are committed to sustainability and positive environmental impact.  In 2022, I joined That’s Vapore as an advisor and partner. In this capacity, I have been actively involved in refining the business model, optimizing the supply chain, and conducting competitor analysis to enhance the brand’s market position. Gruppo Ethos Ristoranti: New business advisor

At Gruppo Ethos, a renowned Italian company with over 30 years of experience in the food and beverage sector, I played a pivotal role as an advisor and consultant in developing an entirely new business model dedicated to chain restaurants. Leveraging my expertise, I conceptualized and implemented the creation of a new production-focused division, spearheaded by Gruppo Ethos, aimed at transforming raw ingredients into recipes, finished dishes, and semi-finished products tailored specifically for the needs of chain restaurants. This initiative was grounded in my vision to industrialize the production processes for the restaurant industry, enabling consistent quality and scalability while optimizing operational efficiency. The project included the design of workflows for transforming raw materials into standardized, high-quality products that cater to the needs of multi-unit operators. My work also focused on ensuring the adaptability of the production model to meet the dynamic demands of the restaurant chains, balancing quality, innovation, and efficiency. In addition, I provided strategic guidance on the integration of advanced food production technologies and supply chain management systems. These improvements enabled better traceability, reduced waste, and enhanced sustainability across the entire operation. This consultancy not only established a new revenue stream for Gruppo Ethos but also positioned the company as a leader in providing innovative solutions for the restaurant chain industry. PanBolla is an innovative Italian fast-food brand that specializes in gourmet sandwiches crafted from semi-wholemeal flours, without the use of improvers or leavening accelerators. The unique aspect of PanBolla’s offering is their revolutionary bread, which is baked under a glass dome, allowing customers to witness the baking process firsthand. This method results in a sandwich with a thin, crispy crust and a soft, melt-in-the-mouth interior. For Algida, I played a pivotal role in developing and adapting the Gelateria Algida format for the Italian market, overseeing the creation and implementation of various points of sale, including the Food Court at Mirabilandia Amusement Park. In this capacity, I led my team in designing and innovating the format, introducing groundbreaking advancements for the time. Key achievements included: •Digital Menus: Pioneering the use of digital menu boards in the food court environment, enhancing customer interaction and operational efficiency. •Innovative Materials: Utilizing cutting-edge materials such as fiberglass and Corian to craft durable, visually appealing, and functional furnishings. •End-to-End Project Management: Beyond design, I was responsible for coordinating all on-site construction activities, ensuring seamless execution and delivering turn-key stores ready for operation. In 2011, I conceptualized, coordinated, and executed an innovative format for Algida gelaterias under Unilever, designed specifically for Italian amusement parks. The project involved creating a groundbreaking structure in the shape of a giant ice cream cup, which served as a visually striking centerpiece and fully functional gelateria. Key highlights of the project included: •Engineering Excellence: The structure was designed to be earthquake-resistant, vandal-proof, and built with sustainable, recyclable materials, ensuring minimal environmental impact and low demolition costs. •Rapid Execution: From concept to completion, the project was delivered in less than three months, showcasing my ability to manage tight deadlines without compromising on quality. •Scalability: The format was successfully replicated across multiple amusement parks in Italy, demonstrating its adaptability and operational efficiency. •Turnkey Delivery: I managed every aspect of the project, from conceptual design to construction coordination, ensuring seamless execution and delivery of fully operational units.
